Easy to Make Energy Bite Snacks {inspired by #Smuckers #Pairings}



Mornings are hard because I'm rushing to get myself ready for work and Norrin out the door to catch the school bus. I make a quick breakfast for Norrin, I usually make do with a cup of coffee. By the time I get to work, I'm starving. 

Last week while scrolling through Instagram, I came across a Smucker's pairings recipe for On-The-G0 Energy Bites that screamed my name. Now, I'm a PB&J girl at heart but I don't get very creative. And my baking is hit or miss. But the Smucker's pairings recipe page has inspired me especially because there's NO BAKING REQUIRED! And all the ingredients were already in my cabinets.

What I Used*

     Smucker's® Simply Fruit® Strawberry Spreadable Fruit 
     Smucker’s ® Creamy Natural Peanut Butter 
     Uncooked Oatmeal (who knew you could eat oatmeal uncooked?!
     Slivered Almonds
     Dried Cranberries (I used ones that were infused with pomegranate)

*original Smucker's® recipe uses Seedless Strawberry Jam, JIF Creamy Peanut Butter and sliced almonds. I used the Smucker's® products and ingredients I had on hand.  

I mixed the ingredients in a bowl. I didn't have measurements to go by so I eyeballed it. I used about 1/2 of a 10oz  jar Smucker's® Simply Fruit® Strawberry Spreadable Fruit and about 4 generous spoonfuls of Smucker’s® Creamy Natural Peanut Butter (because I really like peanut butter). I added oatmeal, almonds and cranberries until I got the consistency I wanted. 

I used a tablespoon to scoop out and shape my bites into baking cups. Within minutes I made 24 little bites of  peanut buttery goodness. Then I placed in the fridge overnight.  

This morning I was able to pop a bite in my mouth while my coffee brewed. It hit all the right notes...salty and sweet with a chewy crunch. And that one little bite kept me satisfied until I got to work. 

I can see those little On-The-G0 Energy Bites becoming a family favorite.
